Chocolate Master Demonstration

Conestoga students and staff are invited to join Master Chocolatier Sergio Shidomi for a chocolate skills demonstration. Mr. Shidomi will be demonstrating his chocolate-crafting skills in both sculptures and handmade chocolates.

About Sergio Shidomi:

Sergio Shidomi is Brazilian born but has been rooted in Canada since 2001 where he graduated top of his class with honours from the Cambrian College Baking and Pastry Arts Program and Chef Training program.

Upon graduation, he moved to one of the gourmet wine regions of Ontario to finesse his skills at the Vintage Inn Hotels. Eventually he found himself at some of the trendiest restaurants in Toronto where he honed his skills even further. Since 2009, Shidomi has been head chocolatier and pastry chef at the Old Firehall Confectionery in Unionville, Ontario.

In 2011, Sergio competed in the prestigious World Chocolate Masters competition (WCM) Canadian Selection and proudly won Best Entremet and placed 3rd Overall. With determination and focus Sergio set his sights on a resounding win at the World Chocolate Masters South America Selection 2013 - a wonderful addition to his impressive resume. His skill and focused dedication is the reason for his success at the recent WCM Paris in November 2013.
