      <![CDATA[Four Conestoga students demonstrated that they are among the best in the country at the Skills Canada National Competition (SCNC) held in Vancouver from June 5 to 8, 2013. All four brought home silver medals to mark their achievements.

      <![CDATA[Darrin Crouse of Fergus was awarded the silver medal in Brick Masonry. He is a student in the <a href="http://www.conestogac.on.ca/fulltime/0843.jsp" target="_blank">Brick and Stone Mason Apprenticeship</a> program. 
<p>
Justin Norris of Waterloo received the silver medal in Web Site Development. Norris is a student in Conestoga&#8217;s <a href="http://www.conestogac.on.ca/fulltime/0057C.jsp" target="_blank">Computer Programmer/Analyst co-op</a> program.
<p>
Jared Rossiter of Kitchener won the silver medal in CNC Machining. Rossiter is enrolled in the <a href="http://www.conestogac.on.ca/fulltime/0709.jsp" target="_blank">Tool and Die Maker Apprenticeship</a> program at Conestoga.
<p>
Matthew Snooks of Kitchener achieved a silver medal standing in Restaurant Service. Snooks is a student in <a href="http://www.conestogac.on.ca/fulltime/0056C.jsp" target="_blank">Conestoga&#8217;s Hospitality Management - Hotel and Restaurant co-op</a> program.
<p>
The Skills Canada National Competition tests the best and brightest skilled trade students against exacting industry standards configured by a National Technical Committee comprised of skilled trade and technology experts from industry and education. The annual event brings together more than 500 young people from all regions of the country to compete in over 40 trade and technology areas. 
<p>
The competition provides an opportunity for students to be tested not only against industry standards, but also against their peers from across the nation in their chosen discipline.

      <![CDATA[Conestoga Program Advisory and Consortia Committee members met at Conestoga&#8217;s Information and Engineering Technology campus in Cambridge on Wednesday, June 5 to hear about the new rules, regulations and opportunities around apprenticeships in Ontario.

      <![CDATA[Held by the <a href="http://www.collegeoftrades.ca/" target="_blank">Ontario College of Trades</a> (OCOT), the information session was developed to answer questions about changes to the way apprenticeships work in Ontario. Originally handled by the <a href="http://www.tcu.gov.on.ca/eng/" target="_blank">Ministry of Training, Colleges and Universities</a> (MTCU), much of the responsibility for overseeing apprenticeships has now been transferred to OCOT, which will administer the licensing, standards and curriculum for apprentices and journeypersons in Ontario. OCOT will also be responsible for awarding certification to journeypersons across Ontario.
<p>
Providing up-to-date information to industry leaders and faculty is part of Conestoga&#8217;s commitment to leadership in apprenticeship training. The college is the among Ontario&#8217;s top providers of such training, serving approximately 4000 apprenticeship students each year.  
<p>
According to Stephen Speers, chair of the <a href="http://www.conestogac.on.ca/fulltime/tradeapp.jsp?SchoolID=5" target="_blank">Trades & Apprenticeship</a> program at Conestoga,  the meeting was also important because it brought together representatives from throughout the trades industry to provide input to OCOT.

&#8220;This group represents a broad cross-section of trades that the OCOT doesn&#8217;t often hear from,&#8221; said Speers. &#8220;These professionals are posing beneficial questions that could help shape the program moving forward.&#8221;
<p>
Speers says the switchover from MTCU to OCOT is still evolving, and that keeping all the stakeholders informed leads to positive growth and transparency.
<p>
&#8220;It is a huge shift for the entire system,&#8221; said Speers. &#8220;Questions being asked here could form a basis for shaping the program moving forward.&#8221;
<p>
Speers says that as the program grows, there will be more opportunities for individuals to give good feedback and help to continue shaping the program. 
<p>
Conestoga delivers apprenticeship training in a variety of areas including the construction, motive power, industrial and service sectors. Partnering with local, national and international companies has allowed Conestoga to offer current and relevant skills-based training that gives graduates access to successful careers in the skilled trades.

      <![CDATA[More than 4100 graduating students will be recognized at the 44th Convocation ceremonies of Conestoga College Institute of Technology and Advanced Learning to be held June 11 -13 at the Doon campus in Kitchener. In conjunction with the ceremonies, President John Tibbits will present a number of outstanding achievement awards.
<p>]]>
      <![CDATA[Faculty member Pat Leicester of the School of Business and Hospitality will be recognized as the 2013 recipient of the Aubrey Hagar Award for Teaching Excellence, Conestoga&#8217;s top faculty honour.  Leicester holds a Bachelor of Arts (Honours) from the University of Toronto and is a Certified Financial Planner. She joined Conestoga as a full-time faculty member in 2003 after a 30-year career with CIBC, where she was ranked as the top investment specialist in Ontario&#8217;s southwest region and received top rankings from CIBC clients for service quality.
<p>
The award is named for Aubrey Hagar, a distinguished member of the Conestoga community for more than 20 years, and a member of the College&#8217;s founding Board of Governors. It will be presented at the Convocation ceremony held on Tuesday, June 11 at 10:00 am.
<p>
The James W. Church Award will be presented to Greg Westenhoefer of Newton, Ontario at the 10:00 am ceremony on Wednesday, June 12.  Established by Conestoga&#8217;s founding president, the award recognizes excellence in a combination of areas: achievement in learning, concern for the dignity of the individual and a personal contribution of benefit to society.
<p>
Westenhoefer, who is graduating with distinction from the Police Foundations program, has demonstrated outstanding academic achievement and has been named to the Dean&#8217;s Honour list.  He has also made great contributions to the program, to the college, and to the community through his leadership, his dedication and his commitment to others. 
<p>
The Conestoga College Mastercraft Award will be presented at the 10:00 am ceremony on Thursday, June 13 to a team of students from the Architecture Construction Engineering Technology program. Established by former College President Kenneth E. Hunter, this award recognizes outstanding technical achievement by an individual or a student team in the creation of a program-related technical project.
<p>
For their project, team members Peter Copil of Kitchener, Brent Florica of Puslinch, Misha Wee Armour of Guelph, Patrick Bronicki of Kitchener and Luke Borges of Cambridge designed a six-storey student residence that included such amenities as a café and fresh food market, fitness rooms and lounge spaces, as well as private and group study areas. The project ran through the students&#8217; entire third year of study and included mechanical, electrical, and architectural design; building code review and analysis; cost estimating and construction documentation.

      <![CDATA[Shannon Corrigan Thompson has joined an elite group of service industry professionals. Recognized as one of the top 30 service industry professionals under the age of 30 by the Ontario Hostelry Institute (OHI), the owner of Hog Tails BBQ and the Lancaster Smokehouse credits much of her win to Conestoga.

      <![CDATA[For Thompson, a 2007 graduate of the <a href="http://www.conestogac.on.ca/fulltime/1026C.jsp" target="_blank">Culinary Management Co-op</a> program, the idea for starting the restaurants came from a school project that was then combined with a love for good BBQ.
<p> 
Thompson affirms that her nomination for the Ontario Hostelry Institute&#8217;s Top 30 Under 30 award came partly out of the close relationship she maintains with the college, including Culinary instructor Philippe Saraiva and Gary Hallam, executive dean of Conestoga&#8217;s School of Business.
<p> 
&#8220;Chef Philippe and I have had a great working relationship since I graduated from Conestoga. Over the last several years he has been a big support.&#8221;
<p> 
Heralded as a rising star in the industry, Thompson says the selection process was long and difficult. The award honours young industry professionals who embrace the excellence, passion and commitment required to be a member of OHI.
<p> 
&#8220;You have to meet certain criteria and make a portfolio. I&#8217;ve never had to make a portfolio because this is our place,&#8221; she laughed. &#8220;I didn&#8217;t have to make a portfolio to get this job because I created this job!&#8221;
<p> 
Established in 1977, OHI works to raise the standards of professional post-secondary hospitality programs at colleges and universities as well as advocating for the industry in a variety of areas including education, training and apprenticeship. The Institute also supports the development of the hospitality industry through financial contributions totalling over $1.5 million.
<p> 
OHI has honoured a number of Conestoga faculty and students with awards, including Hallam, who was named a 2012 Fellow of the Institute.
<p> 
Thompson, who makes an effort to hire Conestoga graduates for her two restaurants, credits much of her success to her studies at the college,and believes that her program helped her prepare for the realities of running a restaurant and dealing with the challenges that it brings.]]>

      <![CDATA[<p>Before coming to Canada I worked as an engineer at the same company for 16 years yet all my experience wasn&#8217;t enough to guarantee myself a place in a tough economy and be employed as a professional.</p>

<p>In June of 2012, I was very excited to hear about Conestoga Career Centre and the Immigrant Internship Program.   I had a good first impression about the Conestoga Career Centre, but when I met with Lil in our first appointment I was completely thrilled. I found what was not working in my job search. Lil did a complete review of my resume and asked the key questions I needed in order to build a competitive resume.            </p>
<p>I started to apply to job offers and results were immediate. I had three phone interviews which led me to be one of the last candidates in a recruiting process.  It didn&#8217;t work out, but I gained confidence and it gave me the possibility to build my interview skills. </p>
Shortly after I received another call from a company  and I was invited not only for a series of interviews, but for a presentation that I would have to do for some members of the senior management. Once again I got Lil&#8217;s help. Lil did a review of the presentation and gave me extremely valuable advice. I had an excellent presentation and interview and a week later I received an offer letter! Lil supported me on the analysis to answer the offer letter, including salary and benefits. </p>

<p>I thank Conestoga Career Centre, and especially Lil, for all the support and advice. Sometimes as immigrants we think that getting the chance to have our first Canadian job experience in our fields is something almost impossible to achieve. I recommend you to visit the Conestoga Career Centre to confirm that we can really contribute as professionals to the economy of this beautiful country.  </p>

      <![CDATA[<p>Neeru is an internationally trained professional, with a Master's degree in Finance from India and experience as a Loan Manager who immigrated to Canada in 2004. </p> 
<p>Neeru was laid-off from a cashier position at Mac's convenient store and visited our Career Centre in February 2011 to find out about the Second Career program in order to explore careers in Financial Advising and Business Insurance. </p> 
<p>She applied to the Business Insurance program following successful completion of General Arts and Science, English Language Studies, level 4.</p>
<p>Neeru graduated in April 2013 with Honours and found employment at her co-op placement.</p>

<p>O'Connor Electric is a full service electrical contractor serving the commercial, industrial, institutional construction sectors since 1987. </p> 

<p>Since this time, she has progressed in her duties, assisting in projects and taking on electrical drawings with vendors.  </p>

<p>Sveta has been working closely with the Estimator, Will Broughton, who is mentoring and supporting her first Canadian work experience.</p>

      <![CDATA[<p>Essential Skills training is offered in many ways to people living in Canada, but what about training for immigrants who are about to arrive?  Conestoga College participated in the Essential Skills for Immigrants project led by the Association of Canadian Community Colleges.  We delivered online  Essential Skills coaching to students from China, India and the Philippines while they were preparing to immigrate to Canada, helping them to prepare for the challenges of living and working in a new country.  </p>
<p>Essential Skills became a framework for learning about Canadian culture in the workplace, making sure that they were prepared for their move, and helping them prepare for job seeking when they arrived.  We all learned how far the rewards of building Essential Skills can reach!</p>

Discouraged because her English language skills prevented her providing translation and assistance to seniors in Canada, she joined the Targeted Initiative for Older Workers (TIOW) program.  Through training offered in this funded program, Qing applied to Conestoga&#8217;s English Language Studies and is currently attending class at the Doon campus.  </p>
<p>Qing Mi increased her employability skills and is thankful TIOW was able to "teach an old dog new tricks."</p>

      <![CDATA[<p>On May 29, Conestoga's School of Trades & Apprenticeship  hosted its fourth annual Awards Presentation and Barbeque in the Roofing Centre at the Waterloo Campus. More than 300 guests including business owners,  industry professionals, faculty and family members watched as 140 awards valued at more than $83,000 in total were presented to students in motive power, construction, industrial and service programs. </p>

      <![CDATA[<p>Special guest speakers included Jim Caruk, master contractor and HGTV expert, and Gail Smyth, executive director of Skills Canada-Ontario.  </p>
<p>Congratulations to the many award recipients for their achievements this past year and thank you to the industry partners and donors for their contributions to the students success. Special thanks to all of the  Trades & Apprenticeship faculty and staff for their support in making this  event such a great success.</p>
<p>The School of Trades & Apprenticeship is the centre of  apprenticeship and skills training in Canada's Technology Triangle.       <![CDATA[With food prepared by <a href="http://www.conestogac.on.ca/fulltime/0056C.jsp" target="_blank">Hospitality Management</a> and <a href="http://www.conestogac.on.ca/fulltime/1026C.jsp" target="_blank">Culinary Management</a> students, the inaugural event was the result of planning and cooperation between students from a variety of Conestoga programs including <a href="http://www.conestogac.on.ca/fulltime/0013.jsp" target="_blank">Business Administration - Marketing</a> and <a href="http://www.conestogac.on.ca/fulltime/1095.jsp" target="_blank">Office Administration</a>.
<p>
Led by faculty member Wendy Durigon, students began planning the event in the fall of 2012. Students decided they wanted to support Nutrition for Learning, a program that provides breakfast and lunch programs for over 9,000 elementary school children in Waterloo Region. Students were responsible for planning every facet of the event, including soliciting community businesses and individuals for draw prizes.
<p>
The event featured guest speakers Steve Spott, head coach of the Kitchener Rangers, and Canadian Olympic hockey player Cheryl Pounder. The speakers, provided through support from RBC, shared their personal stories with guests and spoke of optimism and perseverance in life.
<p>
In addition to the money raised, students also collected $1000 worth of additional prizes for an upcoming Nutrition for Learning auction event.

Taylor previously coached women's fastball at Conestoga from 1988-1990 and 1993-1995, leading his team to two OCAA gold medals and one silver medal. In 1994, he was nominated as coach of the year.

Taylor is currently involved with instructing a Cambridge women's midget team whose head coach, Brad McConnell, will also join Conestoga's coaching staff in the position of assistant coach.

Taylor focuses on teaching the fundamentals of the game first before moving on to technical skills and different softball strategies. He believes that playing a varsity college sport is an honour and should be taken seriously, and expects all players to demonstrate  commitment, hard work and dedication.

      <![CDATA[For Brock Dannecker, a fully automated house isn't just something you see in a futuristic movie. His vision for just such a house was on display in the atrium of Conestoga's Engineering and Information Technology campus during the Technology@Work event held on Tuesday, April 30.

      <![CDATA[Students from various programs joined Dannecker to display year-end and capstone projects at the Tech@Work event. Selected as one of the top projects from the <a href="http://www.conestogac.on.ca/fulltime/0928.jsp" target="_blank">Electrical Engineering Technology program</a>, the home automation system was a popular project throughout the afternoon.
<p>
Dannecker said his group wanted to build something that would benefit the average consumer and the environment.
<p>
"Right now you can go out and spend $80,000 on an alternative energy system, but you don't have a good idea if you're getting the money back," he said. "So what we are doing is we are providing a system that gives you real-time data on the money you're saving."
<p>
Dannecker also said that his team hopes to have the opportunity to lower the cost of the system by using consumer grade components rather than industrial grade components.
<p>
"By moving to consumer grade components, we hope to bring the cost down from $50,000 to around $10,000."
<p>
While students were given a modest budget for their projects, Dannecker said his team benefitted from the support of multiple sponsors for most of their equipment. He also credited working on this project and the overall program at Conestoga with helping him find employment.
<p>
"I recently graduated from the program and I am starting full-time work at a local employer," he said. "The great thing about our program is that it has given me the experience of working in everything from a factory setting to developing alternative energy projects."
<p>
Along with the home automation project, a variety of other projects were on display including an automated food sorting system, an architectural model and a hand-built office desk.

      <![CDATA[<p>With a total of 14 medals across a variety of skills categories, Conestoga achieved a top-place finish among Ontario colleges at the 2013 Ontario Technological Skills Competition (OTSC) held from May 6 - 8 at RIM Park in Waterloo.</p>

      <![CDATA[<p>As a result, Conestoga was presented with OTSC's College Award of Distinction, which is bestowed to an Ontario college that has demonstrated commitment to preparing tomorrow&#8217;s workforce with the hands-on education required to pursue careers in the skilled trades and technologies. Results from students&#8217; performance at the competition, volunteerism and involvement with Skills Canada - Ontario initiatives all contribute in determining which college receives the Award of Distinction. </p> 

<p>&#8220;This is a tremendous honour for Conestoga,&#8221; said President John Tibbits. &#8220;It&#8217;s a tribute to the hard work and successful achievements of our students as they strive to develop the skills that today&#8217;s labour force demands.       <![CDATA[Students in the School of Engineering and Information Technology presented their capstone projects to judges as part of the 2013 SET Project Day on April 18.

      <![CDATA[Designed as a forum for Software Engineering Technology students to present their projects for judges, the event requires students to take on a variety of  roles including programmer, entrepreneur and presenter.
<p>
Russell Foubert, an instructor in the <a href="http://www.conestogac.on.ca/fulltime/1132.jsp" target="_blank">Software Engineering Technology</a> program says that students work for months on these projects and use a variety of skills.
<p>
"These students have worked four to eight months in order to bring a vision to light," he said. "This vision is how to solve a complex problem using all the skills they have acquired through the Software Engineering Technology program."
<p>
Judges listened to the ten-minute presentations before asking students follow-up questions. Much of the event was streamed live over the internet and audience members were encouraged to interact with the students before and after the presentations.
<p>
For Gerry Morkerken, a student in the program, being able to present the idea for his Home Folder project with his classmates was gratifying.
<p>
"This program has been super challenging, and for me, that's great," he said. "It requires lots of technical background, but once you're into it, it's a lot of fun and it's nice that people recognize the amount of work that goes into this."
<p>

      <![CDATA[On May 1, representatives from the Ontario Women's Directorate, the Ministry of Training, Colleges and Universities and Skills Canada joined in with students, graduates, faculty, staff and industry partners to celebrate the tenth anniversary of the Women in Skilled Trades (WIST) program in General Carpentry at Conestoga.

      <![CDATA[The event was held at the Roofing Centre at Conestoga&#8217;s Waterloo campus.
<p>
In a <a href="http://youtu.be/DN2wI5rej1g" target="_blank">video address</a> (youtube), the Honourable Laurel Broten, Minister Responsible for Women's Issues, pointed out that Conestoga was one of Ontario&#8217;s first partners in the WIST program, which facilitates women's access to employment in non-traditional trades through tuition-free training.

<p>
&#8220;Women&#8217;s economic independence and empowerment are key ingredients in a successful society,&#8221; said Broten, as she congratulated graduates, students and staff on the program&#8217;s success.
<p>
Conestoga president John Tibbits expressed thanks to the Ontario government for their support of the program, which has allowed Conestoga to provide education and training that has transformed the lives of many women across the community.  In his remarks, Tibbits discussed the importance of partnerships between government, industry and training institutions such as Conestoga to address the issues of skilled worker shortages and youth unemployment that threaten Canada&#8217;s economic future. 
<p>
Martha George, president and CEO of the Grand Valley Construction Association and a long-time supporter of Conestoga&#8217;s WIST program, cited the program&#8217;s success in &#8220;helping women empower themselves.&#8221;  George said that the shortage of skilled trades workers is the top issue facing Canada&#8217;s construction industry, predicting bright futures for WIST program graduates.
<p>
Special guest speaker Tahani Aburaneh, a 1987 graduate of Conestoga&#8217;s Business Administration program, and now Canada&#8217;s leading women&#8217;s expert on real estate investment, encouraged the students and graduates to become the &#8220;writers of their own stories.&#8221;  Aburaneh, who was born in a refugee camp and arrived in Canada as a young woman with no English skills, and who has fulfilled her dreams of successful entrepreneurship, advised students and graduates that they could find success through a combination of attitude, confidence and commitment.
<p>
Conestoga is a provincial leader in the delivery of trades and apprenticeship training, providing a comprehensive array of programs in construction, electrical, mechanical, industrial maintenance, welding and fabricating, motive power and cabinetmaking.

      <![CDATA[According to results from the 2012-13 Key Performance Indicators (KPI) survey, Conestoga continues to excel in preparing students for today&#8217;s labour market, providing them with the skills and knowledge that allow graduates to quickly find employment and succeed in the workplace.

      <![CDATA[The annual KPI survey, conducted since 1998, collects and reports performance data for Ontario colleges in a number of areas.  Graduate employment rates, graduate satisfaction and employer satisfaction are the three indicators used by the Ministry of Training, Colleges & Universities to assess and recognize colleges&#8217; achievements in preparing students for the labour market.
<p> 
According to this year&#8217;s results, close to 90 per cent of Conestoga graduates (88.9) found employment within six months of graduation, despite a challenging job market.  That exceeds the graduate employment rate of any other college in southwestern Ontario and the Greater Toronto and Hamilton Area (GTHA).
<p> 
Conestoga also ranked first among this large group of colleges for graduate satisfaction, with 83 per cent of graduates indicating that their college experience was useful in achieving their goals after graduation.
<p> 
More than 92 per cent of employers who recently hired Conestoga graduates described themselves as satisfied or very satisfied with the graduate&#8217;s college preparation. Conestoga&#8217;s employer satisfaction rating has exceeded 90 per cent every year since the survey was initiated. According to President John Tibbits, Conestoga&#8217;s continued high rankings in the annual KPI survey result from the college&#8217;s strong commitment to career-focused education programs that reflect Ontario&#8217;s changing job market.

&#8220;Preparing students for successful futures as we support the changing needs of our community is at the heart of Conestoga&#8217;s vision,&#8221; Tibbits said. &#8220;This year&#8217;s KPI results show that our efforts to provide the very best in career-focused learning continue to make a difference, even in today&#8217;s challenging economic climate.&#8221;

&#8220;Ontario&#8217;s economic future depends on the availability of a well-trained workforce with the appropriate skills to meet current and emerging industry needs,&#8221; Tibbits continued. &#8220;A stronger emphasis on applied learning, including the introduction of three-year degree programs at colleges, would help address the current skills mismatch and contribute to regional, provincial and national prosperity.&#8221;

      <![CDATA[A new initiative that will develop and showcase academic collaboration for art, design and digital content creators in downtown Kitchener was unanimously approved by city councillors on Monday, April 22.
<p>]]>
      <![CDATA[The Kitchener Studio Project, to be located at 44 Gaukel Street in the former Canada Post Office, is led by an academic partnership consisting of Conestoga, Wilfrid Laurier University and the University of Waterloo. It will provide a unique collaborative space for the art, design and digital content creators needed to serve the region's rapidly growing digital media cluster. <p>
According to project organizers, digital media companies locating in the Kitchener area have indicated that their site selection requirements include nearby access to art and design talent. Companies require content creators with the skills, knowledge and talent to develop their innovations through such areas as visual graphics for smartphone applications or music composition for gaming environments.
<p>
The new digital arts hub in downtown Kitchener will:
<p>
<li>	Create a collaborative space for local post-secondary students who are creating digital media content</li><p>
<li>	Showcase design talent needed for digital media and other sectors, and establish Kitchener as a recognized source for creative talent</li><p>
<li>	Provide space for collaboration among businesses, students and  the arts community  for digital projects</li><p>
<li>	Provide state-of-the-art resources and space for the arts and culture community</li><p>
<li>	Maximize the use of currently vacant space at Gaukel and Charles streets in downtown Kitchener</li><p>
<p>
As well as the three post-secondary institutions, the project will include business and community partners, including Communitech, Christie Digital, Electronic Arts and the regional arts community. 
<p>
The <a href="http://www.kitchener.ca/en/News/index.aspx?newsId=94c072ec-a4cd-447a-a383-e8dd7e0dd0f5">City of Kitchener</a> will spend $200,000 on upgrades to the building and lease the space at nominal cost for an initial five-year term.  
<p>
City councillors <a href=" http://www.kitchenerpost.ca/news/art-boost/">praised</a> the project, suggesting that it will serve as a launching pad for new businesses, provide more vitality for the downtown core, and lead to sustainable, quality jobs.
<p>
The Kitchener Studio Project will create a design ecosystem, a collaborative space that will provide digital content creators a place to learn, conduct research and pursue entrepreneurial initiatives.  
<p>
Conestoga's <a href="http://www.conestogac.on.ca/fulltime/mediadesign.jsp?SchoolID=4&p=h">School of Media & Design</a> has increased in enrolment by 27 per cent since 2011, and now serves approximately 900 full-time students through a variety of programs, including digital media and design, videography and broadcasting, journalism, public relations, graphic design, visual merchandising and interior decorating.

      <![CDATA[Williams, along with several Conestoga students, recently competed in the <a href="https://www.facebook.com/media/set/?set=a.599527716723929.1073741829.257673464242691&type=3" target="_blank">Canadian Intercollegiate Chocolate Competition</a> at Humber College on April 14th. Students from nine colleges in British Columbia, Quebec and Ontario came together for the two-day competition, which involved students constructing one-metre tall chocolate sculptures and preparing a variety of bonbons and plated desserts.
<p>
Williams said his desire to work with chocolate started with an explanation by Evelyn McManus, an instructor in the <a href="http://www.conestogac.on.ca/fulltime/1026C.jsp" target="_blank">Culinary Management</a> program at Conestoga.
<p>
&#8220;It was the way Chef Evelyn explained how to temper chocolate,&#8221; he said. &#8220;Reaching a certain temperature so the molecules align, making the chocolate shiny and structurally strong.&#8221;

A former University of Waterloo chemistry student, Williams said that the science of chocolate just made sense to him.

&#8220;Having graduated from the chemistry faculty at the University of Waterloo, I understood the way in which Chef Evelyn was explaining what was happening with the chocolate.&#8221;
<p>
Working with chocolate also involves a lot of patience, and students are required to put in additional time in the kitchen to perfect the craft.
<p>
&#8220;Students who work with chocolate have to really want to learn,&#8221; said McManus. &#8220;We try to train for 6 to 8 hours each week in addition to their other courses.&#8221;
<p>
McManus said that students must master a variety of skills when it comes to working with the confection.
<p>
&#8220;Students need to learn to temper chocolate, dip chocolate, mould chocolate, make fillings and learn how to make cream and butter ganaches,&#8221; said McManus. &#8220;They also need to understand how to bake, make pastry and find ways to add a new molecular cuisine element to the dishes.&#8221;

Williams said that the culinary program at Conestoga helped him discover the possibilities when working with chocolate.
<p>
&#8220;I came to the culinary program because I love making soups and working with flavours,&#8221; he explained. &#8220;But this experience has taught me that chocolate is just another medium to showcase flavours.&#8221;
<p>
Williams credits the culinary program with exposing him to many aspects of cooking and restaurant management, and said that the school has prepared him for his future career.
<p>
&#8220;After I am done school, I am going to work in a café, focusing on my love of soups&#8230;and now, chocolate!&#8221;
